Cabbage Upkari- Baggage with Cabbage

We loved cabbage only in pakaodas before. In January of 2003, we had been to my grandmother's sister's place in Chennai. She made this lovely dish that was just yummy! We were delighted that we had found a new love towards a vegetable that was a no no in our house before. Couldn't wait to get back home and try this dish ourselves. The first few times we made it, it never came out well- either we overcooked the cabbage or added too much water. You don't have to add any water as cabbage has enough water content in it. Also, to enjoy the dish at it's tastiest phase, cook only till the cabbage is al dante'.

1 small cabbage coaresly chopped
1 big onion(preferably white), finely chopped
2 green chilies cut lengthwise
1 tsp of grated ginger
1 tsp urad dal
1 tsp of channa dal
2 tbsp of coconut grated
1 sprig curry leaf
1 tsp mustard
2 tbsp olive oil
salt to taste

Heat oil in a pan. Add the mustard, urad dal, channa dal and curry leaves. When the mustard begins to pop, add the onions and saute till transparent. Add the cabbage, green chilies and ginger.Cover and cook till 3/4th done. Add salt and cook till the cabbage is al dante'.

Enjoy!
