Mushroom Fried Rice

We have been lazy all this while- the holiday mood has set in, and we have been eating out a lot! Sometimes we would have the urge to cook something just to post here but it would be marred by our excitement to go out and have fun with our friends. This is a post that was in our drafts for sometime- we love this recipe. We usually eat salad in the afternoon and we use mushrooms in it. Therefore, we always have a small carton of mushrooms in our fridge. But these poor things have a very small shelf life- we can't use all these mushrooms in our salads. We, therefore, use this recipe to use up mushrooms that would otherwise be wasted.


Preparation time: 10 mins
Cooking time: 18 mins


1 cup basmati rice( preferably,or sona masuri)
1 cup mushrooms diced finely
1 green bell pepper diced into very small bites
1 medium onion finely chopped
2 bay leaves
6 cloves
5 cardamoms
3 large garlic cloves cut into tiny bites
2 tsp coriander leaves
2 tbsp ghee
salt to taste

Heat a non stick skillet. Add ghee. When it melts, add the onions and saute till golden brown. Add the bay leaves, cardamom, cloves and garlic. Saute for 2 mins. Add the bell peppers and the mushrooms . Saute for another 3-4 mins. Add the rice and mix well. Keep mixing for 2 mins. Add 2 cups of water( or 2 cups of vegetable or chicken stock). Mix well. Cover lid and cook till almost done. Add salt,mix well and cook till done. Garnish with coriander leaves.
