Pesto Chicken Sandwich on Ciabatta


Who doesn't love Sandwiches. They are so easy to make and delicious to eat. We became hooked to sandwiches after we moved to the U.S. The first sandwich we ate was at Subway. In a way, Subway has revolutionised the way Americans look at sandwiches in recent times. Sandwiches can be healthy if made on whole wheat bread. It is an excellent low fat-low calorie food too. For more information on sandwiches go here. You can use any bread in the recipe below. We love Ciabatta. Sourdough, Whole Wheat taste equally good.


Cooking time: 15 mins
Prepartion time: 10 mins


Ciabatta bread 1/4 loaf
shredded chicken breasts
romaine lettuce
red onions
tomato
cucumber
basil pesto

Take chicken breasts and season it with your favorite seasoning on both sides (we used Santa Maria seasoning mix- you get this in Whole Foods). Bake it for 10 mins on each side. Remove and shred the chicken into tiny pieces. Layer a piece of Ciabatta with pesto. Then place lettuce, chicken, tomato, onions and cucumber(in this order). Cover it with another piece of Ciabatta. Spread pesto on the inside of this piece too.

If you like a grilled sandwich, you can grill it with a panini maker. Grilling squishes all the ingredients with the bread and makes it more flavorful. Eat it with a cup of hot coffee/tea.
