Cheese Omelette



Who doesn't love cheese omelette's, especially in the early morning with a steaming hot cup of coffee. This omelette is fluffy on the outside and gooey on the inside. We have added a Jalapeno to add a little fire. We learnt this trick when we ate a cheese omelet at a small diner near our house. The Jalapeno they added made the omelette awfully tasty. Ever since we have never made a cheese omelette without the Jalapeno.

Preparation time: 5 mins
Cooking time: 5 mins

2 eggs well beaten
1/4 cup mixed cheese, grated
1/4 tsp melted butter
1/2 Jalapeno slit and seeded
fresh pepper from the mill
salt

Season the beaten eggs with salt and pepper. Mix well and keep aside. Heat a pan. Apply butter to the entire surface of the pan. Pour the egg mixture into the pan so that it spread across the entire surface.Place the jalapeno in the center of the egg mixture. When the omelette starts to cook, add the cheese in the middle of the omelette, in a line. After the cheese has melted fold the omelette to the center from both sides. Serve it hot.

I am getting hungry looking at this. I sometimes make this quick recipe at work - the days when I want more than bagel for breakfast. Anyways - beat one egg in a bowl, add salt an pepper and mix. Add small chunks of laughing cow cheese. Microwave for 40 seconds - stir - another 40 seconds in the microwave. It is so good - you might have to experiment with your microwave times.
