An absolute favorite of ours-we have grown up eating this dish almost three times a week! Who doesn't love potatoes? They are the yummiest of all root vegetables and form a staple in most cultures.
Preparation time: 10 mins
Cooking time: 15 mins
2 potatoes thinly sliced
2 medium roasted red chilly
1 tsp mustard seeds
2 pinches asafoetida powder
3 tbsp olive oil
salt
Slice potatoes thinly and keep them immersed in water till you start cooking to prevent them from turning black. Heat oil in a skillet. When hot, season with mustard and chilly. Once the mustard begins to pop add potaotes(drained well). Sprinkle 2 tbsp of water to the skillet. Mix, cover and cook till 3/4th done. Add asafoetida and salt. Mix well. Add more water if needed at this stage. Cook till done.
