Tuna Salad Sandwich

When you have a busy work day, the last thing you want to do is wait at the office kitchen and see if the microwave is free to heat up your food. We generally prefer to have cold lunches such as salads and sandwiches. It is less messy, easy to assemble, and you don't turn out smelling like a chef who has been working in the kitchen all day! This sandwich recipe is our recent favorite and we have been eating it for the last few days.

Preparation time: 10 mins
Cooking time: 0 mins


2 whole grain bread slices
2 button lettuce leaves

To make a Tuna Salad:

1 pack of Tuna(we used "Starkist" chunk light tuna in water)
1/4 cup cucumber, diced finely
1/4 cup red onion, diced finely
1/2 tomato, diced finely
6 tbsp fat free mayonaisse
2 tsp alfalfa sprouts(optional)
1 tbsp lemon juice
fresh pepper from the mill
salt
Mix well all the ingredients required to make a tuna salad. Cover the mixture in a air tight container and refrigerate for sometime. Spread this mixture onto a slice of whole wheat bread covering it evenly, cover with a lettuce leaf and finish with a slice of the second bread on top.

Enjoy!

Note: For a special treat, toast the bread slices with butter and use them in sandwiches.
