Scrambled Eggs with Meat Starters

For those of us who can't get enough of eggs as part of our daily breakfast, this dish fits the bill to a 'T.' We have used the Morning Star Veggie Meat Starters (a perfect protein meat substitute for all vegetarians )available in the freezer section of any grocery store . We wanted to make it asian by adding the soy sauce, ketchup and pepper.

Preparation time: 0
Cooking time: 7-8 mins

3 eggs
1/2 cup of veggie( or any) meat starters
1 tbsp soy sauce
1 tbsp tomato ketchup
PAM cooking spray(or any)
salt to taste
fresh pepper from the mill

Heat the pan. Spray with PAM. Add the eggs and scramble them till 3/4th cooked. Add the meat starters and mix well. Cook till the eggs are fully scrambled and the meat starters have cooked( it will take 2-3 mins). Add the soy sauce and ketchup. Mix well. Season with salt( be careful as soy sauce has already enough sodium in it) and fresh pepper.

Note: You can also add sauteed onions, mushrooms and bell peppers to this dish. In that case, use 1 tsp of olive oil instead of the PAM, saute the onions and the peppers first and then proceed with the above recipe from here.

Enjoy!
