Ooey- Gooey Egg Sandwich
Hm,Ooey Gooey is how we feel whenever we eat this sandwich. The story goes that these sandwiches were first conceptualised during the civil war- soldiers ate protein rich foods that provided them with energy to sustain long hours in the battle, and this sandwich was one of them. We love having these sandwiches to satisfy our midnight cravings. Use fat reduced cheese if you want a low fat version.
Preparation time: 5 mins
Cooking time: 5 mins
2 eggs, well beaten
1 slice of bread
1 tsp of butter
1 thin slab of American cheese
fresh pepper from the mill
salt
Beat two eggs in a microwave safe bowl. Season with salt and fresh pepper from the mill. Mix well. Microwave the egg mixture on high for 2-3 mins. In the meantime, heat a skillet. Butter the bread(we used whole grain variety)on both sides. Toast it on a skillet till golden brown on each side. Remove and transfer to a plate. Place cheese and scrambled egg on top of it( in that order). Press gently. The heat released from the bread and the egg melts the cheese which becomes gooey. Enjoy with a hot tea or coffee.
