Tamatar and Sabji Pulao-Tomato and Vegetable Pulao

One of the things we detest about U.S is the wastage- wastage in all forms. For instance, those of you who are working would be familiar to the huge quantity of pizzas, coke and salads people order at meetings and parties, half of which finds it's way into a garbage can. Similarly, when we buy groceries most vegetables come pre-packaged which means you will end up buying more than required. Since these veggies have a self-life you can't refrigerate them for a long time, and one ends up disposing them off every so often. If only people in U.S knew what it meant to starve!! Coming to the post, this is one of Sanjeev Kapoor's recipes which was made to save our vegetables from going waste. The recipe is very simple and delicious, a treat for people like us who love bland yet flavorful Indian food.

Preparation time: 10 mins
Cooking time: 20 mins


1 cup basmati rice
1 cup cauliflower, broken into tiny florets
1 cup, beetroot, chopped into small squares
1 cup mixed vegeatbles(beans, carrots, corn)
1 cup mushrooms, chopped into small pieces
1 big onion, diced
2 big tomatoes, chopped finely
2 tbsp ghee
7-8 cloves
6 big cardamoms
6 small cardamoms
1 big stick dalchini
1 1/2 tsp cumin seeds
salt

Heat ghee in a pan. When it melts add cumin, cloves, cardamoms, dalchini. Fry for 1-2 mins. Add onions and saute till transparent. Add tomatoes. Cook till they become mushy and oil starts to leaves at the sides of the pan. Add the vegetables and cook them for 3-4 mins. Add rice. Cook for 2-3 mins. Add 2 cups of water. Mix well. Cover and cook till 3/4th done. Add salt, mix well and cook till done. Enjoy with raita or a curry.

this is what i call my beloved, deepti :)
although, i don't know much about cooking, except making tea, maggi and omlette (a very recent addition)... dee on the other hand is a very good cook and wants me to learn cooking before we get married ;)

Thanks Pinkdogwood--Yeah, we weren't big on having beetroots in pulaos too but once we tried it we love it this way. Give it a try and we promise you wont be disappointed(:-).
