A basic Chicken curry

You are in the middle of a week, have a tiring day at work, come back home and find that all the frozen entrees' you bought to last for one whole week is finished. What can you do to fill up your empty, screaming stomach- reach for the freezer and find that you have one last pack of frozen meat left. Search through your produce section of the fridge and find that there is one big red onion, a few tomatoes left. Not wasting any time you decide on making this rainy day chicken curry, which we believe every one has a unique recipe for.

Preparation time: 15 mins
Cooking time: 40 mins

1 lb chicken breasts, thawed and cut into tiny pieces( wash well)
1 red onion, grated
3 medium tomatoes
1 tbsp ginger-garlic paste
1 tbsp coriander powder
1 tbsp cumin powder
1 tsp chilly powder
1 tsp garam masala powder
1/2 tsp turmeric powder
1 long cinnamon stick
7-8 cardamoms
6 cloves
coriander leaves, finely chopped
3 tbsps ghee
salt to taste

Heat a pan. Add ghee. Add the cloves, cardamom and cinnamon. Fry for 2 mins. Add onions and fry till transparent. Add the tomatoes and fry till mushy. Add ginger-garlic paste. Add the powders, fry for 2 mins. Add 1 1/2 cups of water. Bring it to a boil. Add chicken and salt. Mix well. Cover and cook for 20 mins or till done. Garnish with coriander leaves. If you want some tang, add 1 tsp of lemon juice.Serve with a side of bread or white rice.

Enjoy!

Girls, you had me at the first cpl. of lines :-D. Yup, eating the same three dishes everyday, which are cooked either on the weekend or beginning of the week ;). This one sounds like a good deal, yummy to boot!

Chicken curry is totally my recipe for a hungry weekday. I always use chicken on the bone though, tastes much better!
