Chettinad Chicken inspired dish

Ohh la la. Me and cooking on a Friday night -- that's a wonder of wonders. However, this time we decided to do it a little differently. After having dinner outside, we went to go to a grocery store on our way home and bought groceries for the rest of the week. It was here that I unexpectedly stumbled upon a beer (Bud Light!). I am not a drinker at all but today somehow I was in the mood for some beer tasting. We purchased a can of Bud Light along with some chicken for tomorrow's cooking.

After I returned home I decided to cook the chicken right away as my husband poured some beer for us. This recipe is from "Live To eat" blog. I think it was a very pleasurable experience as we talked about our respective day and enjoyed a relaxed Friday night. Hm, all you naughty minds if you are thinking if that followed after drinking some beer you are wrong -- we were a sweet couple sitting in front of the t.v while my husband helped me with some homework for my Saturday morning class. This recipe is very very spicy. So try it only if you can tolerate heat. Very simple dish that tastes great especially with plain white rice or white bread.

Ingredients:

1lb chicken
2 cups onions diced
2 cups tomatoes diced
10-12 red chillies
1 tsp fennel seeds
1/4 tsp turmeric powder
2 tbsp coriander leaves chopped
3 tbsp olive oil
salt to taste.

Method: Heat oil in a pan. Add chillies and fennel. Brown for 2 mins. Add the onions and saute till transparent. Add tomatoes and cook till they are slightly mushy. Add turmeric. Add chicken and salt. Mix well. Fry on a medium heat for 5-8 mins. Add some hot water (3 tbsp) and mix well. Cover and cook till done. Garnish with coriander leaves. Eat hot with plain white rice or white bread.
