Fruit and Yogurt


This can be eaten as a healthy snack for dessert or as a breakfast. It tastes almost like parfait without the granola. Add some nuts if you want to make it crunchier. We made the yogurt and fruit mixture separately and refrigerated them for a few hours before eating. That way it was cold and tasted almost like ice cream.

Ingredients:
1 cup fat free plain yogurt ( greek yogurt would taste YUM too)
2 tbsp honey
1 tsp vanilla flavor
11/2 cup fruits -- banana, blueberries, pineapple (whatever you like)
2 oranges (juice of 1 and another diced into small pieces)
nuts to garnish

Method: Take a bowl. Add one cup of orange juice to it. Now add all the fruits and mix them well so that they absorb the orange juice. In a separate bowl, add yogurt, honey and vanilla. Mix well. Take a ice cream cup. Add a dollop of the yogurt mixture. Top it with 3 tbsp of the fruit mixture. Garnish with mint and nuts(optional).
