My sister, Chaya, sent me the recipe of this dish along with the picture. This was our favorite noodle dish apart from maggie noodles(do we call this instant box of noodles a dish-may be Rachael Ray would(:-))Chaya has altered the recipe a little bit to give it a more asian flair. The original recipe(the one we learnt from our mom) consisted of adding tomato ketchup, ginger, garlic, black pepper and green chilies instead of sambal oelek.
1 pack rice noodles
1/4 cup carrots cut lengthwise into very thin strips
1/4 cup beans cut lengthwise into very thin strips
1/4 cup green bell peppers cut lengthwise into very thin strips
1/4 cup cabbage chopped finely
1/4 cup mushrooms chopped finely
1 medium size onion cut into thin strips
3 spring onions
1 tbsp sambal oelek(concentrated chilli paste)
1 tbsp soy sauce
1 or 2 tbsp vinegar
salt to taste.
Heat oil in a pan. Add the onions and saute till transparent. Add the rest of the vegetables and stir fry on high flame for 3-4 mins. Add sambal oelek, soy sauce and vinegar. Stir fry for 1-2 mins more. Finally add the prepared noodles(recipe given below) and stir well. Serve hot.
Making the noodles: Boil a pot half filled with water. Add the noodles along with 1 tsp of olive oil. Cover and cook till noodles are soft. Drain the water from the pot and keep the noodles aside.
Enjoy!
