Schzewan Noodles with an Asian Flair

My sister, Chaya, sent me the recipe of this dish along with the picture. This was our favorite noodle dish apart from maggie noodles(do we call this instant box of noodles a dish-may be Rachael Ray would(:-))Chaya has altered the recipe a little bit to give it a more asian flair. The original recipe(the one we learnt from our mom) consisted of adding tomato ketchup, ginger, garlic,black pepper and green chilies instead of sambal oelek.



1 pack rice noodles
1/4 cup carrots cut lengthwise into very thin strips
1/4 cup beans cut lengthwise into very thin strips
1/4 cup green bell peppers cut lengthwise into very thin strips
1/4 cup cabbage chopped finely
1/4 cup mushrooms chopped finely
1 medium size onion cut into thin strips
3 spring onions
1 tbsp sambal oelek(concentrated chilli paste)
1 tbsp soy sauce
1 or 2 tbsp vinegar
salt to taste.


Heat oil in a pan. Add the onions and saute till transparent. Add the rest of the vegetables and stir fry on high flame for 3-4 mins. Add sambal oelek, soy sauce and vinegar. Stir fry for 1-2 mins more. Finally add the prepared noodles(recipe given below) and stir well. Serve hot.

Making the noodles: Boil a pot half filled with water. Add the noodles along with 1 tsp of olive oil. Cover and cook till noodles are soft. Drain the water from the pot and keep the noodles aside.
