Spinach Cooked with Onions- Mughlai Saag
This recipe is adapted from Madhur Jaffery's Indian Cooking. A nice compliment when eaten with Butter Chicken and Basmati Rice.
Preparation time: 10 mins
Cooking time:20 mins
2 lb spinach, washed,trimmed and chopped finely
4 oz onions, peeled and chopped finely
4 tbsp ghee or olive oil
1/2-1 fresh green chilli, finely chopped
1 tsp fresh ginger, finely peeled
1/2 tsp sugar
1/4 tsp garam masala powder
4 fl oz water
salt to taste
Heat oil in a pan. Add the onions and saute till transparent. Add the spinach, chilli, ginger, salt and sugar. Stir and cook the spinach for 5-6 mins. Add the water and bring to a simmer. Cover tightly, turn the heat to low, and cook for about 10-12 mins. Uncover and boil away some extra liquid. Add the garam masala and simmer for 2 more mins.
